Anyways, as for nutrition, IMHO, an athlete in your level should be a bit more careful then the rest of us mere mortals because of all the training stress. If you are gluten intolerant, and now that you are not training very much, it is a good opportunity to experiment about what to eat. I recently bought a book called "The Paleo diet for athletes". It is basically the modified version of the old book adjusted for the needs of endurance athletes. It differs from the classic hi-carb diets in the way that it reserves the carb loaded foods for before, during and after the workouts and puts more emphasis on quality protein and quality fat.
